Grilled Stone Fruit Skewer Sundaes

Ingredients
  

  • A selection of plums, peaches and cherries
  • Olive oil for brushing
  • Vanilla ice cream
  • Fresh mint
  • Sea salt

Instructions
 

  • Pit and slice the fruit and fit onto skewers. Brush with a bit of olive oil. Grill over med-high heat until grill marks just begin to appear. Remove and let cool. 
  • Scoop ice cream into dessert bowl, spoon fruit over, finish with mint leaves and a pinch of sea salt.
