Your Christmas cookie line up just got a lot easier! Brownie cookies are the newest quick baking cookie hack and you’ll be whipping them on repeat this holiday season. These Cranberry Dark and White Chocolate Brownie Cookies are a combination that Santa will remember.
I started this 10 minute cookie dough recipe by opening a box of brownie mix. I used one by the Wholefoods brand, 365. But you can use whatever mix you like the best. It’s hard to go wrong with a pre-made fudgey boxed brownie mix. Saying that 5 times fast will take you longer to do that making the batter for these cookies!
By adding some all-purpose flour (or alternate flour of your choice) you’ll get a fuller, more cakey cookie that makes it different from the texture of a traditional brownie. A few other additions like vanilla extract, the chocolate pieces and the dried fruit take it to a next-level decadent seasonal treat.
The batter is quite thick so you could use a standing mixer if you want to save your strength for gift wrapping and tree trimming. Pro tip; do not use a whisk to stir this batter.
I used a wooden and some muscle to combine the dry ingredients at the end, but it does take some effort
Using a cookie scoop to portion out the mix onto your baking sheet is key for me. It really ensures even-sized cookies and placement is much more accurate.
I love the flavor combination of dark chocolate and dried cranberries. It’s such a wonderful transition from the flavors of thanksgiving to those of the Christmas season. The gleams of red berries and the touches of white chocolate make them so pretty and festive. I added pistachios because I couldn’t resist a salty enhancement and of course the green hue to really complete the Christmas spirit!
Christmas Cranberry Dark & White Chocolate Brownie Cookies
Ingredients
- 1 box of pre-made brownie mix
- 1/4 cup flour of your choice (I used all-purpose)
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup vegetable oil
- 1/2 cup dried cranberries
- 1/2 cup dark chocolate pieces
- 1/2 cup white chocolate pieces
- 1/4 cup crushed pistachios for topping
Instructions
- Preheat oven to 375 degrees and line a baking sheet pan with parchment paper.
- In a mixing bowl, combine the brownie mix, flour, oil, eggs and vanilla. Mix or stir well.
- Once that is combined, add the cranberries and chocolate. Stir to incorporate well.
- Using a cooking scoop, place golf ball size dollops of brownie mixture about 2 inches apart on the baking tray.
- Bake for 10-12 minutes. Remove from oven and sprinkle with pistachios. Let them cool on the paper to set up before removing to enjoy!
