Old Style Tuna Croquettes
Ingredients
For Croquettes
- 1 12 oz tin of tuna in water, drained well
- 2 tbsp parsley, finely chopped
- 2 tbsp red onion, finely diced
- 4 tbsp melted unsalted butter
- 5 tbsp flour
- 1/4 tsp salt
- A few turns of black pepper
- 2 cups plain breadcrumbs or GF Panko flakes
- 2 cups vegetable oil or alternative high heat oil
For Tomato Sauce
- 1/2 white onion diced
- 2 cloves of garlic smashed
- 1 28 oz tin of whole tomatoes, not drained
- 1 tbsp tomato paste
- 1 cup heavy cream
Instructions
- Combine the tuna, onion and parsley in a bowl. Make the white sauce by combining flour, butter, salt and pepper. Add the milk last and not all at once. Stirring it in slowly. You will want to add the milk a little at a time to make sure you get the right consistency, which is thick but smooth and pliable. You may not need to use all the milk. Slowly add white sauce to the tuna, mixing and watching again for the right consistency, which is not too liquid and should be stiff enough to hold it's shape when formed. Mix well. Wet your hands, form egg shape croquettes, and set on a sheet pan or plate. Chill for 2-3 hours.
- Whisk one egg and 1 tablespoon of water in a bowl, put the breadcrumbs into another bowl. Dip each croquette in the egg and then breadcrumbs and place back on tray, chill again for about an hour.
- In a soup pot, add about a tablespoon of olive oil, the onions and garlic. Saute until softened and slightly browned. Then add tomatoes, breaking them apart. Cook this down for about 15 minutes. Add the cream and remove from heat. Let cool slightly and blend using an immersion blender or spoon into a stand up blender. Blend until very smooth.
- Heat the oil in a large skillet, deep enough that the oil will cover the croquettes. Fry the croquettes, turning frequently so they brown evenly on all sides. When done, set on paper towels to soak up excess oil.
- Spoon the tomato sauce onto a serving dish and place croquettes around on top of the sauce. Finish with fresh dill or parsley. Serve warm.
- *You can try these in an air fryer! I don’t have one but they may work great! Let me know!
