Shredded Courgette Salad with Lemon Mint & Flax Seed Dressing 

I am so inspired by my first Melissa’s Produce delivery. I wanted to celebrate each and every item, allowing it to take the stage and shine. I started with these beautiful zucchini, or courgettes. I love to call them by their English name to sound a bit fancy. This bright lemon dressing is so simple but packs a punch. The flax seeds add the most satisfying crunch and the mint just elevates the entire dish. Hope you enjoy!

Shredded Courgette Salad with Lemon Mint & Flax Dressing

Prep Time 20 minutes
Servings 6 people

Ingredients
  

  • 5-6 small zuchinni or ‘courgettes’
  • 1/2 cup crumbled feta cheese
  • fresh mint

Dressing

  • 1/4 cup olive oil
  • juice of one lemon
  • 1 tbsp flax seeds
  • 1 clove garlic, grated
  • 1 tbsp fresh mint, chopped 
  • salt & pepper

Instructions
 

  • Wash the courgettes, trim ends and shred – I used my Cuisinart with the shredding blade. This makes it so very easy. 
  • In a jar, combine all ingredients for the dressing, shake well
  • Dress the courgettes, add the feta and whole mint leaves, mix well. After plating the salad, top with extra flax seeds and mint leaves, and more feta if you like! Serve right away.
