Hydra-Green Honeydew & Cucumber Salad with Dill and a Lime Vinaigrette

Hydra-Green Honeydew & Cuke Salad with Dill & Lime Vinaigrette

Ingredients
  

Dressing

  • 1/3 cup olive oil
  • zest of one lime
  • juice of two limes
  • 1 tsp honey
  • 1 tbsp white wine vinegar
  • 1 tsp salt

Salad

  • 1 honey dew melon
  • 1 large English or Armenian cucumber
  • a handful of fresh dill
  • bee pollen
  • a small handful of crushed pistachios

Instructions
 

  • Deseed and chop the melon into large, irregular chunks. Lightly peel the skin of the cucumber and chop irregularly as well. Add both to a large bowl. 
  • Make the dressing by simply adding all the ingredients to a container and shaking very well. Pour over the melon and cukes, add the fresh dill and crushed pistachios on top and toss well.
