Hydra-Green Honeydew & Cuke Salad with Dill & Lime Vinaigrette

Ingredients
  

Dressing
  • 1/3 cup olive oil
  • zest of one lime
  • juice of two limes
  • 1 tsp honey
  • 1 tbsp white wine vinegar
  • 1 tsp salt
Salad
  • 1 honey dew melon
  • 1 large English or Armenian cucumber
  • a handful of fresh dill
  • bee pollen
  • a small handful of crushed pistachios

Method
 

  1. Deseed and chop the melon into large, irregular chunks. Lightly peel the skin of the cucumber and chop irregularly as well. Add both to a large bowl. 
  2. Make the dressing by simply adding all the ingredients to a container and shaking very well. Pour over the melon and cukes, add the fresh dill and crushed pistachios on top and toss well.
