Mix yogurt, vanilla, honey and coconut flakes together in a mixing bowl. Prep a sheet pan with a piece of parchment paper. Spread yogurt mixture onto tray, making some valleys for the passionfruit to fill in. Next, spoon over the passionfruit and lightly swirl with a spoon. Top with pistachios, more coconut flakes, pistachios and chia seeds. Finish bby adding a drizzle of honey over the top. Freeze at least four hours, or overnight. Break apart and enjoy. I like to thaw it out for 10-15 minutes before eating.
