Pear & Walnut Upside Down Pastry

Ingredients
  

  • 1 sheet puff pastry, thawed
  • 2 pears, thinly sliced ( I use a mandolin)
  • 1 onion, thinly sliced
  • 3-4 sprigs of fresh thyme
  • 3 tbsp blue cheese
  • 3 tbsp crushed walnuts
  • 1 egg, whisked
  • Honey drizzle for each square

Instructions
 

  • Preheat oven to 400. Thaw puff pastry dough. On a lightly floured board, gently roll out to remove creases and thin slightly. Cut into four squares
  • Thinly slice and sauté the onion on a low heat until brown and caramelized. Remove to cool
  • Line a baking sheet with a Silpat liner or parchment paper. Begin by drizzling honey on the tray where you want each pastry to sit. Follow this by adding some blue cheese and fresh thyme leaves on top. Then, layer the pear slices over one another and stack them over each area. Finish the by adding a few pieces of caramelized onion and sprinkling some crushed walnuts over the top
  • Lay a square of pastry over each parcel, pressing down lightly on the edges
  • Brush the pastry with the whisked egg and bake at 400 for 20 minutes
  • Remove from oven and let cool for 10 mintues before flipping over. Garnish with a few fresh thyme leaves and enjoy warm or room temperature
